Ingredients

  • 1 cup (220 grams) packed light brown sugar
  • 1 cup (11.5 oz) light corn syrup
  • 1 cup (250 grams) creamy peanut butter; I like Jif
  • 1 cup salted, dry roasted peanuts, chopped
  • 6 cups cornflakes
  • 1 cup semisweet chocolate chips

Steps

  1. Line a 9 x 13 pan with tin foil, extending over the sides. Spray pan with cooking spray.

  2. Cook sugar and corn syrup in large sauce pan until sugar dissolves and it comes to a boil, stirring constantly, about 5 minutes.

  3. Off heat, add peanut butter and peanuts, stirring until incorporated.

  4. Add cornflakes to put and stir until coated.

  5. Scrape into prepared pan and smooth into corners.

  6. Let cook completely, 1 hour on counter or 1/2 hour in fridge.

  7. Microwave chocolate chips in glass bowl until melted.

  8. Spread over top of bars until covered.

  9. Let cool until chocolate is solid, remove from pan to cutting board and then cut into 1 inch squares.
